Spinach Salad with Mandarin Oranges
and Toasted Almonds

What's in this for baby and me? Vitamins A and C and fiber.

An amazing combination! This spinach salad is packed with vitamins A and C and fiber, and it is a good source of protein and iron. The Asian-style dressing complements the sweet oranges, but feel free to use your favorite vinaigrette or your favorite citrus fruit, such as fresh grapefruit or regular orange segments. For extra protein, you can add some sauteed tofu to the salad. Oh, and toasting the almonds is essential.

 

- Serves 2-3 -
Dressing Spinach Salad
1 teaspoon soy sauce 2 cups packed baby spinach (one 6-ounce bag), washed and dried (see Timesaving Tip)
1 tablespoon seasoned rice vinegar 1/3 cup sliced or slivered almonds, toasted (see Cooking Tip)
3 tablespoons canola oil 1/2 cup mandarin oranges in juice (no added sugar), drained
A few drops of toasted sesame oil
 
1 very small garlic clove, crushed (optional)  
Freshly ground pepper, to taste  

 

  1. To make the salad dressing, combine all of the ingredients in a small bowl and mix well. Set aside.
  2. To make the salad, combine the spinach, almonds, and mandarin oranges in a salad bowl. Add the dressing, toss gently, and serve immediately.

 

Timesaving Tip: Use packaged prewashed baby spinach leaves.

Cooking Tip: To toast the almonds, place them in a small nonstick skillet over medium heat and stir until golden brown. Or, place the almonds on a baking sheet under a broiler for a minute or two–watch them carefully, because they tend to burn quickly.

Diabetic Tip: Omit the almonds and use only one-quarter of the dressing.

3 ounces protein, whole wheat bread, reduced-fat 2% milk or low-fat yogurt and fresh fruit that contains vitamin C
