Apple-Blueberry Granola Crisp

What's in this for baby and me? Folic acid and fiber.

Warm the oven, topped with a scoop of frozen yogurt, ice cream, or whipped cream, nothing beats this super-crunchy crisp. Rich in folic acid and fiber, the crisp is also a good source of iron and vitamins A, C and the Bs. The granola topping can be used to cover any 8-or 9-inch baking dish of fruit-peaches or nectarines combined with berries are particularly good.

 

- Makes one 9-inch crisp; Serves 8 -
Apple-Blueberry Filling Granola Topping
4 large Granny Smith apples (about 1-3/4 pounds), peeled, cored, and cut into 1/4-inch slices 1/2 cup all-purpose flour
1 dry pint (2 cups) fresh blueberries, washed and picked over 1/2 cup lightly packed light brown sugar
1/2 cup lightly packed light brown sugar 6 tablespoons cold unsalted butter, cut into pieces
2 teaspoons ground cinnamon (optional) 1-1/2 cups Kellogg's Healthy Choice Low Fat Granola without Raisins
2 tablespoons all-purpose flour or 1-1/2 tablespoons cornstarch  

 

  1. Preheat the oven to 375ºF. Have an 8- or 9-inch baking dish ready.
  2. To make the filling, combine all of the ingredients in a large bowl and mix until well blended. Transfer the filling to the baking dish and set aside.
  3. To make the granola topping, combine the flour and brown sugar in a bowl. Add the butter and, using your fingers, rub the mixture until it resembles coarse meal. Add the granola and continue to mix until the granola is incorporated and the topping holds together in small clumps.
  4. Distribute the topping evenly over the filling. Bake for about 45 minutes, or until the apples are tender when pierced with the tip of a knife and the juices are bubbling. Remove the crisp from the oven and allow to cool slightly before serving. (Refrigerate leftovers.)

 

Timesaving Tip: Use frozen blueberries instead of fresh.
